Not every monster is scary. Some are just sweet. Meet Biscuit Boo, the caramel-colored spook of the Kookie Muncher family and the reason so many Munchers keep asking for Biscoff cookies in Cabanatuan. It says “boo!” but nobody has ever been frightened. Mostly, people just get hungry.

Who is Biscuit Boo?

Biscuit Boo is a brown butter cookie packed with crushed Biscoff biscuits, which give it a darker caramel color and a speckled, crumbly look. Creamy white chocolate chips peek out from the dough, and crunchy shards of Biscoff sit on top like a little crown. It tastes like caramel, warm spice and toasted butter all at once.

How Biscuit Boo became a monster

Once upon a time, a tiny ghost lived at the back of our pantry. Every night it floated out and haunted the jar of Biscoff biscuits, nibbling a corner here and a crumb there. It really wanted to be a scary ghost. So one night it drifted over to the chocolate chips and shouted its scariest “BOO!”

The chocolate chips did not run away. They just said, “You smell like caramel. Can we be friends?”

The little ghost was so surprised that it tumbled right into a bowl of warm brown butter dough, still covered in Biscoff crumbs, with a handful of white chocolate chips clinging on. Into the oven it went, and out came Biscuit Boo: a sweet little spook with a crunchy crown and a caramel heart. It still says “boo” every now and then. Softly. Politely. Usually right before you take a bite.

The biscuit behind the boo

Biscoff has a story almost as fun as Biscuit Boo’s. The caramelized biscuit comes from Lotus Bakeries, founded in 1932 by the Boone family in the village of Lembeke, Belgium. It’s a type of speculoos, a biscuit traditionally given to children in Belgium on Sint Niklaas Day, December 6.

By the 1950s, the biscuits were being wrapped one by one and served with coffee in cafรฉs. That’s where the name comes from: Biscuit + coffee = Biscoff. The Low Countries has a lovely history of the Biscoff biscuit if you’d like to read more.

Biscuit Boo thinks it’s only fair that a biscuit made for coffee ended up inside a cookie made for Munchers.
