Every monster family needs a first monster. Ours is Chompy, a thick, golden brown butter chocolate chip cookie with a big grin and an even bigger appetite. If you’ve ever wondered who started the whole Kookie Muncher gang here in Cabanatuan, grab a cup of coffee and pull up a chair. This is Chompy’s story.

Who is Chompy?

Chompy is the original Muncher. The friendly one. The monster who greets every new customer at the door with chocolate on its face and crumbs everywhere. It isn’t fancy, and it doesn’t need to be: Chompy is a classic chocolate chip cookie made the slow, careful way, and it’s the one we always tell first-timers to try.

Every big Chompy starts as a weighed 80-gram scoop of dough, so it bakes up thick and chewy instead of thin and crispy. Golden edges, a soft center and glossy puddles of melted chocolate on top. That’s Chompy on a good day. (Every day is a good day for Chompy.)

How Chompy became a monster

Legend says it happened on a rainy afternoon in our kitchen. A bar of butter was melting in the pan, and instead of taking it off the heat, we let it keep going. It foamed. It crackled. It turned golden, then toasty brown, and the whole kitchen started to smell like toffee and roasted nuts.

The smell drifted over to a bowl of plain cookie dough sitting on the counter. That dough had never smelled anything so good in its life. It rumbled. It wiggled. A chunk of chocolate slid right into the spot where a mouth should be, and the dough said its very first word:

“Chomp.”

Okay, cookie dough doesn’t really wake up. We checked. But brown butter really does smell that good, and that’s the moment our chocolate chip cookie stopped being ordinary and started being Chompy.

The secret behind our chocolate chip cookie: brown butter

Brown butter is regular butter cooked until the milk solids inside it toast. As they brown, the Maillard reaction kicks in and creates lots of new flavor compounds, the same kind of browning that makes toast and grilled food taste so good. The French call it beurre noisette, or “hazelnut butter,” because of its nutty smell. America’s Test Kitchen explains how browning butter works if you’d like the nerdy details.

Here’s what else goes into every Chompy:

  • Chocolate chips, so there’s chocolate in every single bite
  • Chopped bittersweet chocolate chunks that melt into those big, glossy puddles
  • Dough that rests overnight or longer, so the flavor deepens and the cookie bakes up thick
  • A tiny pinch of salt on top while it’s still warm, to make the chocolate taste even more chocolatey

A little chocolate chip cookie history

Chompy likes to brag that it comes from a famous family. The chocolate chip cookie is usually credited to Ruth Graves Wakefield, who ran the Toll House Inn in Whitman, Massachusetts. In the late 1930s, she chopped up a bar of semi-sweet chocolate and mixed it into her cookie dough. The chocolate held its shape instead of melting away, and the chocolate chip cookie was born. Chompy calls her its great-great-grandma. We haven’t had the heart to correct it.
